October is Vegetarian Awareness Month. I have been a vegetarian for almost a year and a half now. What started as a bet I made with myself turned into a lifestyle change. I challenged myself to give up meat for a week, and in that week I realized I felt better and continued with my vegetarian lifestyle. Since becoming a vegetarian, I am always looking for healthy and simple recipes. ?I still cook regular meals for my non-vegetarian family but need to always be able to make a quick bite for myself, and this is one of my stand-by dinners!!
It literally takes me 10 minutes to make and is absolutely delicious. I even top it with fresh lump crab meat!!!
Ingredients:
- 3 15 oz cans of diced tomatoes
- 1 12 oz bag of fresh spinach
- 1 tsp of crushed red pepper flakes
- 8 oz container of fresh mozzarella balls
- 1 pound angel hair pasta
- 1 tsp olive oil
- 8 oz jumbo lump crabmeat
Directions:
1. In a large saute pan, pour one tsp of olive oil.
2. Add tomatoes and crushed red pepper.
3. Simmer on low.
4. Add spinach, stir until wilted.
5. Add mozzarella balls.
6. Boil pasta according to package directions.
7. Add pasta to sauce.
8 Top with Jumbo Lump Crab Meat.
